Dynamic equilibrium
Body tissues are continuously changing – taking up nutrients, synthesizing new compounds, and releasing waste materials. Even bones, which many people mistakenly think of as fixed materials, are changing; they take up nutrients to replace those that are lost and to maintain stores for release to the blood circulation. Even with this constant change the body maintains, in health, a fine balance often referred to as dynamic equilibrium or homeostasis.
One way in which balance is maintained is by the release of stored mineral elements, for example, from the liver and bones. This balance is regulated by hormones that respond to very slight changes in the blood levels. Another way by which balance is achieved is to control the absorption of a nutrient according to the body’s need. The per cent of absorption of calcium and iron is low. But if the body needs more calcium or iron, the rate of absorption increases, for example, during growth. By regulating the amount of these minerals absorbed, the small intestine protects the body against overload. Still another mechanism of control is through excretion by the kidney. Almost all of the sodium in the diet is absorbed from the intestinal tract into the blood circulation. But if the sodium is in excess of the body need-which it usually is-the amount not needed is rapidly excreted in the urine.
Toxicity
Although many mineral elements are absolutely necessary for a great variety of functions, some of these can be toxic if they are consumed in excessive amounts. Among these are copper, fluorine, iodine, iron, manganese, selenium, and zinc. The levels of these trace elements found in a mixed diet furnish essential needs but are below levels of toxicity. The danger of toxicity arises (1) when supplements such as iron pills arc used in excess, (2) when mistakes are made in substituting one compound for another, or (3) when workers in industrial plants are exposed to toxic levels of substances. From time to time there are reports of children opening a bottle of iron-containing pills and consuming sufficient amounts to become ill. Some years ago a worker mistook salt for sugar and added it to infant formulas; some infants died from the excess salt.
