Phosphorus
Probably no mineral element has more functions than phosphorus. It is essential for (1) building bones and teeth, (2) phospholipids that regulate the absorption and transport of fats, (3) DNA (deoxyribonucleic acid) and RNA (ribonucleic acid), which are nucleic acids essential for protein synthesis and genetic coding, (4) ATP (adenosine triphosphate) and ADP (adenosine diphosphate), which are necessary for storing and releasing energy according to the body needs, (5) enzymes that are required to utilize carbohydrates, fats, and proteins, and (6) buffer salts in the regulation of acid-base balance.
The phosphorus allowances for individuals of various ages are the same as those for calcium. If the diet supplies enough calcium and protein, it will furnish enough phosphorus. Milk, meat, poultry, fish, egg yolk, legumes, and nuts are rich sources.
Magnesium
About 60 per cent of the body magnesium is found in the bones and teeth. Together with other mineral elements, magnesium regulates nervous irritability and muscle contraction. Magnesium activates many enzymes including those involved in energy metabolism. Like calcium, the salts of magnesium are rather insoluble, and much of the dietary magnesium is not absorbed. Most absorption occurs from the upper gastrointestinal tract.
The adult allowance for magnesium is 300 to 350 mg per day. Magnesium is a constituent of the chlorophyll of plants; so one would expect green leaves to be rich in this mineral element. Nuts, cereal grains, and sea-foods are especially rich in magnesium.
Dietary deficiency of magnesium is not likely. However, some disease states give rise to symptoms of deficiency. Patients with diabetic acidosis, chronic alcoholism, kwashiorkor, and severe malabsorption diseases sometimes show the characteristic symptoms of tremor and nervous irritability.
Sulfur
Sulfur is present in three amino acids: methionine, cystine and cysteine. Thus, it is present in all proteins in the body. Connective tissue, skin, hair, and nails are especially rich in sulfur. Also, thiamin and biotin which are B-complex vitamins and coenzyme A contain sulfur in their molecules.
No recommended allowance has been set for sulfur, nor has any deficiency in human beings been observed. A diet that is adequate in protein supplies liberal amounts of sulfur.
