Trace elements
A number of trace elements function primarily as parts of enzymes or vitamin molecules, or as catalysts for chemical reactions. They include:
Chromium: involved in carbohydrate metabolism
Cobalt: a constituent of vitamin B12
Copper: a catalyst for hemoglobin formation
Manganese: enzyme systems; normal bone structure; blood formation
Molybdenum: enzyme systems
Selenium: related to activity of vitamin E
The amounts of these elements required by the body are not known, but at any rate they are very small. The mixed diet supplying adequate amounts of other nutrients will furnish sufficient amounts of these elements.
Some fallacies and facts
1. Fallacy. A diet low in calcium leads to nervousness.
Fact. When the diet is inadequate, calcium is readily withdrawn from the bones to supply the minute amounts needed to regulate the response of the nerves. There is no evidence that a low-calcium intake leads to nervousness.
2. Fallacy. Cocoa and chocolate interfere with the absorption of calcium.
Fact. The amounts of cocoa and chocolate normally eaten do not interfere with the absorption of calcium. Although they contain some oxalic acid, one would need to eat abnormally large amounts of chocolate and cocoa to have any noticeable effect. Hot cocoa, chocolate pudding and chocolate milk are quite appropriate in the menus of children as well as adults. However, the child should not be given these foods so often that he refuses to take regular milk.
3. Fallacy. Foods purchased in American markets are likely to be lacking in important trace elements.
Fact. The wide variety of foods used in the diet supplies ample amounts of all trace elements known to be needed excepting iodine and fluorine. Farmers use chemical and organic fertilizers in order to realize high yields of foods that are excellent in nutritive quality. Present-day techniques of food processing retain most of the nutritive values.
