Meeting daily needs
Most foods are poor sources of vitamin D and hence no values are published. Analyses have been made for a number of B-complex vitamins. The diet that supplies sufficient thiamin, riboflavin, and niacin will also furnish enough of the other ? factors.
In selecting food sources for vitamins we should keep in mind (1) how much of a given food we would ordinarily eat, (2) how often the food is eaten, and (3) how stable the vitamin may be after processing or cooking. Parsley is an excellent source of vitamin A, but it will make little difference in the average diet, because it is so often left on the plate or, when eaten, is consumed in such small amounts. A raw fruit might be a good source of ascorbic acid but might contain little of the vitamin after drying or canning.
Wheat germ, dried yeast, and fish-liver oils are rich sources of several vitamins but are generally regarded as dietary supplements rather than basic items of the diet. Liver and other organ meats are outstanding sources of vitamin A and B-complex vitamins; yet their contribution to the diet will be important only if these foods are included on a fairly regular basis?for example, once a week.
Vitamin supplements
For the healthy individual, the diet that includes recommended levels of the Four Food Groups together with some oils for vitamin E will meet the needs for vitamins.
Supplements of vitamins A and D, when taken over a period of time, could result in toxic symptoms. Supplements of the water-soluble vitamins in excess of body need will be excreted in the urine. Thus, they are a waste of money.
Vitamin supplements are indicated when the diet, through illness or ignorance, has been inadequate over a long period of time. In such circumstances the vitamin in a concentrated form is a rapid form of therapy. Equally important is dietary counseling so that the affected individual makes the necessary changes in his diet.
Vitamin supplements are indicated in some specific disease conditions: pancreatitis, ulcerative colitis, sprue, cystic fibrosis; and following surgery or injury from burns. In these situations the intake is usually much greater than that supplied by a diet alone. The physician prescribes the kinds and amounts of vitamins that are to be taken.
